Boozy Coconut Lime Popsicles

These boozy, paleo-friendly coconut milk popsicles are the perfect summer treat! Made with Malibu rum, full-fat coconut milk, and limeade for a hint of tartness, each creamy coconut lime popsicle tastes like paradise on a stick. Serve them at your next backyard barbecue or pool party!



  • 68 popsicles molds (depending on size of mold)
  • 1.5 cans full-fat coconut milk (equivalent to 20 ounces of coconut milk)
  • 1 cup sugar-free limeade
  • 1 cup Malibu Rum
  • 4 tsp lime zest (equivalent to zest of 2 limes)
  • 1 tbsp maple syrup
  • 1 tbsp honey


  1. Combine all ingredients in a blender. Blend until fully mixed.
  2. Pour mixture into 6-8 popsicles molds. Freeze for a minimum of 6 hours.
  3. Once popsicles are fully frozen, carefully remove from molds.
  4. Serve immediately and enjoy responsibly!


  • Freeze popsicles overnight for best results.
  • If you have trouble getting the popsicles out of their molds, dip the tip of each mold in warm water for a few seconds and try again. It works like a charm and won’t damage the popsicles.
