These fun chocolate-covered strawberry carrots are the perfect festive no-bake Easter dessert! Eat them by themselves or use them to embellish the tops of other fun Easter desserts, like carrot cake or “carrot patch” dirt cups.
Wash and dry strawberries completely. Melt the orange wafers in a microwave-safe bowl for 45 seconds, stir with a butter knife, and then microwave again for 30-second intervals until smooth. Once smooth, stir frequently to keep from clumping.
Gently grab each strawberry by the stem and dip it in the bowl of smooth melted chocolate. Once covered, hold it over the bowl for about 30 seconds to shake off as much extra chocolate as possible. Place on wax paper to harden. Repeat with remaining strawberries.
Using a fork or decorating piping bag, lightly drizzle melted chocolate on top of the hardened chocolate-covered strawberries to create “carrot lines.” Garnish stems with fresh oregano to create vibrant carrot tops. Refrigerate until ready to serve!
Strawberries can be made ahead and will last up to 3 days when stored in an airtight container in the fridge.
If you don’t have orange candy melts, you can also mix orange food dye and almond bark or white chocolate chips to create the dipping chocolate.
