I’m not normally one to pass on a cocktail, but every once in a while, it’s nice to go the mocktail route. Especially if you’re entertaining guests who don’t drink, having some refreshing summer mocktail ideas up your sleeve is never a bad idea. My go-to is this effervescent Cucumber Lime Lavender Spritzer. I found it in the April edition of Cooking Light, and I’ve yet to find a mocktail I enjoy more. It’s low calorie and balances floral, tangy, and sweet flavors perfectly. Plus, you can add a splash of gin to turn this cucumber mocktail into a delightful summer tipple. Here’s everything you’ll need to make this absolutely delish cucumber mocktail:
- 1/2 cup water
- 1/3 cup granulated sugar or sugar replacement (I use Swerve)
- 1/4 cup fresh mint leaves
- 1 tbsp dried culinary lavender (I found mine here)
- 3 cups chopped peeled cucumbers (equivalent to 3 average-sized cucumbers)
- 2/3 cup fresh lime juice (equivalent to the juice of 4 limes)
- 6 cups club soda
Cucumber Lime Lavender Spritzer Recipe
I haven’t tried many cucumber mocktail recipes, but I honestly can’t imagine one that’s yummier or more refreshing than this Cucumber Lime Lavender Spritzer! Keep reading for a step-by-step tutorial. You’ll also find a printable/downloadable recipe card at the bottom of this post!
Start by combining the water and sugar in a small saucepan. If you’re looking for a lower carb alternative to white sugar, I love Swerve. It’s natural, and it tastes great! Bring to a boil and stir until the sugar dissolves. Next, remove from heat and toss in mint leaves and edible lavender. Allow them to steep for 15 minutes. Filter through a strainer and allow to cool.
Next, combine the chopped peeled cucumber and lime juice in a food processor. Process until smooth.
Finally, grab a pitcher and combine mint-lavender simple syrup, cucumber-lime puree, and club soda. Stir well. Serve over ice, garnish with mint sprigs and lime wedges if you have any left over, and enjoy!

- Combine 1/2 cup water and sugar in a saucepan. Bring to a boil over high, making sure to stir until sugar dissolves. Remove from heat and add mint leaves and lavender. Allow to steep for 15 minutes. Pour through a strainer into a bowl and discard solids. Allow to cool completely.
- Combine cucumber and lime juice in a food processor. Process until smooth.
- Combine mint-lavender simple syrup, cucumber-lime puree, and club soda in a large pitcher. Stir well. Serve over ice and garnish with mint sprigs and lime wedges.
