Owning my own business definitely has its perks, but having a set schedule is not one of them. Especially this time of year, my calendar is packed with travel, client meetings, and annual planning (and shopping, too, obviously), so I rarely have time to sit and enjoy lunch or breakfast. I also have blood sugar issues, as well as self-diagnosed “hanger,” so skipping meals entirely isn’t a viable option. Consequently, I’ve basically become a connoisseur of simple, convenient, and, most importantly, hearty snacks to help get me through the day. My all-time favorite is Minute® Ready to Serve Rice! I just pop the cup in the microwave (fully cooked so no water required), and I’ve got a delicious, warm meal in 90 seconds.

Minute® Ready to Serve Rice comes in a few different packages/sizes, but my go-to is their newer 7 oz variety. Not only is it enough to keep me satiated throughout the day (it can be served as a meal for one or as a side for two), it comes in 3 yummy flavors– Garlic & Olive Oil Jasmine Rice, Southwest Pinto Beans and Rice, and Cilantro & Lime Jasmine Rice. To try them all yourself, use this coupon to get $.75 off your purchase of one 7oz Minute® Ready to Serve Rice at Hy-Vee through 12/31! You’ll find it in the pasta and rice aisle.

It’s hard for me to pick a favorite flavor, but I probably reach for the Garlic & Olive Oil Jasmine Rice most often. It’s lightly seasoned (with natural flavors), gluten free, vegan and the cups are BPA free. It also has no artificial preservatives or flavors. Mostly, though, I just love garlic and olive oil, so it makes sense. If you’re vegan, though, you’ll absolutely love the Southwest Pinto Beans and Rice. Not only is it tasty, it’s certified vegan and a good source of both fiber and potassium!

Also, depending on time/circumstance, I’ll either eat the rice as-is or throw some toppings in for extra nutrients. I basically create my own warm little buddha bowls, and they’re so good. My personal favorite combo? A spicy black bean burrito bowl! I take a cup of Garlic & Olive Oil Jasmine Rice and add in black beans, salsa, avocado, and queso fresca. If I want to be fancy, I’ll throw in a lime slice and top with cilantro, too. So tasty!

Oh, and if you keep it all in the cup, there aren’t any dishes to do afterwards. Bonus perk!

Probably my favorite thing about Minute® Ready to Serve Rice, though, is the convenience factor. I mean, traveling can make just about anyone desperate for a quick meal, especially around the holidays. I love that instead of turning to delivery (or worse– fast food), I can just pop some Minute® Ready to Serve Rice in the microwave, and I’m set. That being said, its portability is another major plus, too. Every cup is individually sealed, so when I’m traveling or just out and about, I can safely stash a cup to heat up later in my carry-on or purse for emergencies.

Side Note: I specifically mentioned the seal because I’ve had one too many snacks wreak havoc on the interior of my bag. I think I speak for most women when I say that thoughtful airtight packaging goes a long way!
